I always take my camera with me when I'm on a plane, but getting a good shot out the window is purely a matter of luck. You need:

a clean and unscratched window
a decent seat with respect to the wing
clear skies
something on the ground worth shooting
or an interesting cloud formation
the right light
the right side of the plane with respect to the sun
a steady plane
